RECIPES FOR MONDAY
Almond Pancakes (Wheat-Free)
Prep Time: 10 minutes
Cooking Time: 10 minutes
Yields: 4 servings
Ingredients:
1 egg
1/2 cup almonds, finely chopped
1 3/4 cups oat or whole wheat pastry flour
1 1/2 cups almond, rice or soy milk
1/4 cup canola oil
1 tablespoon non-aluminum baking powder
1/2 teaspoon sea salt
Directions:
1.Mix dry ingredients in a bowl.
2.Mix wet ingredients in a separate bowl, then combine.
3.Cook on lightly oiled skillet until golden brown. Serve warm with maple syrup or honey.
Variations:
Try putting 1/2 cup of shredded coconut and/or 1/4 cup malt sweetened chocolate chips instead of almonds.
Try a little lemon zest, the juice of one lemon (add a little less milk) and 1/2 cup poppy seeds for lemon poppy seed pancakes.
Salmon Cake
Prep Time: 5 minutes
Cooking Time: 5 minutes
Yields: 2 servings
Ingredients:
4 ounces cooked salmon
6 rice crackers
1/2 onion, diced
2 cloves garlic, minced or pressed
1 tablespoon lemon juice
1 tablespoon olive oil
Dash black pepper
Dash of coriander
Directions:
1.Break salmon and rice crackers into small pieces.
2.Mix all ingredients except the oil together. Create several small patties.
3.Refrigerate for 1 hour.
4.In a skillet, heat oil on high. Quickly fry both sides of each patty for 2 minutes.
5.Serve with rice or veggies and a lemon slice.
Carrot and Raisin Salad
Prep Time: 5 minutes
Yields: 4 servings
Ingredients:
1 pound carrots, grated
2/3 cup raisins
1 1/2 cups orange juice
1 tablespoon freshly grated ginger root
Directions:
1.Soak raisins in orange juice for an 1 hour or overnight.
2.Mix all ingredients in a bowl and marinate for 1 hour or overnight.
3.Serve and enjoy.
Bok Choy Stir-Fry
Prep Time: 5 minutes
Cooking Time: 10 minutes
Yields: 4-6 servings
Ingredients:
1 bunch bok choy
1/2 red or yellow pepper, chopped
2 cloves garlic
2 tablespoons olive oil
Pinch sea salt
Directions:
1.Wash bok choy and separate greens from stems, chopping stems into smaller pieces if so desired.
2.Dice red pepper and garlic.
3.Heat oil in skillet and add garlic, sauté for a few seconds.
4.Add bell pepper and stir while cooks for about 2 minutes.
5.Add stems and sea salt, cook for a few minutes, then add greens and cook until wilted. Serve.
Simple White Rice
Prep Time: 5 minutes
Cooking Time: 25 minutes
Ingredients:
cup white or brown rice
2 cups water
Directions:
1.Bring rice and water to a boil in a covered pot.
2.Turn the heat down as low as possible.
3.Cook for another 25 minutes.
4.Do not stir.
Simple Brown Rice
Prep Time: 5 minutes
Cooking Time: 45 minutes
Ingredients:
1 cup brown rice - short or medium grain brown rice is best
2 cups water
Directions:
1.Bring rice and water to a boil in a covered pot.
2.Turn the heat down as low as possible.
3.Cook for another 45 minutes.
4.Do not stir.
